| 3 C grated Gruyere cheese | 2 C grated Emmenthaler cheese | | 3 T flour | 1 1/2 Riesling wine | | 1/4 C milk | 1/8 t nutmeg | | 1/8 t white pepper | 1 clove garlic |

instructions: Toss cheese with flour. Split garlic and rub pan. Add wine and bring to simmer. Slowly add cheeses while stirring. Add milk, nutmeg and pepper.
