| 5-10 potatoes peeled & quartered | 2 carrots peeled & shredded | | 1 leek or 1 onion sliced | 1 tbsp butter | | 1 1/2 cups water (or milk or half n half) | 1 tbsp salt | | 1/4 tsp nutmeg | 1/2 tsp pepper | | celery or lovage to taste |

instructions: Melt butter in pot, add leek/onion and celery/lovage. Sautee and add potatoes, water, and salt. Cook over medium heat covered for about 15 minutes. Add carrots and let boil until potatoes are soft. Drain broth and set it aside. Mash potato/veggie mixture in pot. Add nutmeg, pepper and mix. Pour broth back into pot with mixture. Add water/milk/half n half as needed to achieve desired consistency.You can also add cheese, bacon, etc to the soup.
NOTE: To retain flavor, when reheating soup, do not bring to a boil!
